Simple, Quick, and Good!

We all know that the Rotisserie chicken has made our lives easier, right?  Well, I know I live in a cave and now I have decided I live under a rock in that cave!  This Kroger chicken is the very best!  The bag has a zip-lock and you just pop it in the microwave!  Now don’t tell me you all knew that?

Do the potatoes first.  Cut wedges, mix until coated, with olive oil, sea salt.  Line cookie sheet with aluminum foil and bake until tender and lightly browned.  Heat that delicious chicken in microwave following bag directions.

Oh yeah, I chopped some fresh rosemary in the mix too.

I have blackberries in my freezer from last summer.  Hmm…maybe a cobbler? Preheat oven to 375degrees…. I put about 2 cups of berries, 3/4 cup sugar, 1 cup of water in sauce pan.  Cook until thickened.  I found a box of Pepperidge Farm puffed pastry in freezer.  That will work!  I used one sheet, let it kinda thaw, sliced it in strips, Cover bottom of 8 inch baking pan(using half of puffed pastry). Sprinkle approx. 1/4 cup of sugar, 2tbl. of butter. over pastry and bake until very lightly brown.  Take out of oven and pour berry mixture over pastry.  Add the remaining strips, sugar and butter.  Bake until lightly browned again.  So easy and soooo good.  A scoop of vanilla ice cream doesn’t hurt.
