I Can’t Believe I Shaved My Legs For This!

The older I get, the more of a deal it is to go to the Doctor.   Certain parts of my body get more attention as I bathe and dress.   Ah hah!  I’m talking about my ears and nose!  I know what you were thinking!  Anyway, like I said, it is a deal.

I had an appointment yesterday.  I went about 15 minutes early.  I can almost always find someone to talk to in the waiting room. …and I did.  “Mrs. Parker”, the receptionist called.  “What time did you think your appointment was?”  Confidently, I answered, 11:00. “No, it was at 10:00,” she replied.  “I just need to tell you, you are in for a long wait”…..we talked, I was able to leave a detailed message for the nurse.  So, I left without seeing the doctor.

  I cannot believe I shaved my legs for this!

I had my camera lens poked thru the blinds.  I was so afraid he would fly before I could focus.  I think he was looking for my “sweet little birds”.

Grandchildren’s Favorite

I’ve never cared for sandwiches until I tasted my first Panini.

It is, hands down,  our grandchildren’s favorite meal at MiMi & Granddaddy’s.

I’ve never made the same one twice.  It depends on what I have in the frig.  Good deli ham and turkey, at least two different kinds of cheese, is a good start.  Oh wait, the very most important ingredient is a good earthy bread.  You can’t go wrong at Publix.  I usually use the five grain Italian.Pininis 005Brush the outside of each slice of bread with olive oil.  Usually I mix a spread of mayo, mustard, and pesto? if I can do it without the kids seeing me!

I sautéed onions and bell peppers, and cucumbers.  Sometimes I do this and sometimes, I don’t.  I’m telling you, you can’t mess this up!Pininis 007

A String of Pearls…

I knew I was going to be home all day today so I decided to put on something comfortable.  An old faded soft top and some pants that had bleach splatters on them.  While brushing my teeth, my eyes wandered over to my jewels (I use that description lightly.)  Yep, I think that is exactly what I need today! I wore pearls around my neck and on my ears!  All day long!

Bacon & Parmesan Pasta

I got this recipe from Ree Drummond and she got it from Trish Boese….just sayin….

Ingredients:

  • 1 pound bacon
  • 1/4 teas. crushed red pepper
  • 1 pound Rigatoni or Penne Pasta
  • 1/2 cup heavy cream
  • 1/4 cup cream cheese
  • 1/4 cup Parmesan Cheese
  • 2 whole eggs
  • 1/4 teas. freshly ground black pepper

In a skillet, fry the bacon.  Sprinkle with red pepper flakes.  When done, remove bacon, let cool and roughly chop.  Meanwhile, cook the pasta in boiling salted water until done (accor. to package instructions).   Place cream and cream cheese in small saucepan.  Heat over low heat until cream cheese is melted, and whisk until smooth.  Remove from heat.  Add the parmesan cheese, eggs, and pepper and whisk until blended.  Drain pasta (reserving 1/2 cup of hot water and return to pot.  Immediately add the white sauce and toss to coat.  The hot pasta will cook the eggs.  Stir in the bacon, add some of the pasta water (if needed) to loosen the sauce.

I absolutely could eat this every day!

The best cornbread!

A tutorial for “the best cornbread” ever!

These are your ingredients: 

New Years Day Food 014

First, I cannot imagine making cornbread in anything other than an iron skillet.  (Just sayin) Preheat oven to 425.  At this time put skillet (with 1 T. oil) in oven.

1 cup of self-rising cornmeal  (Martha White or White Lily)

1 cup buttermilk….must use buttermilk! 

1 egg

2T canola oil

Pour into hot skillet. Bake @425 until brown.New Years Day Food 019

I always flip the pone over when done  Slice and serve straight from the skillet.  All you need now is some real butter!
